Whole Wheat Peanut Butter Cookies

I made these yesterday on the theory that I don’t like peanut butter or peanut butter cookies so I wouldn’t eat them. I was wrong! These are so tender and not overly peanut flavored I ate about six. We took them to our Tuesday morning playgroup and they were a big hit with Moms and little alike.


Makes 5 dozen
375 degree oven
8-10 minutes

Cream together:
1/2 cup shortening (I used butter as I refuse to have shortening in the house)
1 cup peanut butter (I used smooth, natural)
1 1/2 cups sugar
1 egg

Add:

1 cup wheat germ
2 tsp vanilla
6 T water (my peanut butter was a little dry so I added a bit more water to make the dough workable)

Combine and add: (I just put these things in the bowl and mixed well with my hand)

1 1/2 cups whole wheat flour
1 cup dry milk
1/2 tsp salt
1 tsp baking powder
2 tsp baking soda

Mix well, roll into 1 inch balls and bake on greased sheet.
