Indian Style Wedding Lentils (Gluten Free Dairy Free)

This recipe was invented on the eve of our wedding (after the rehearsal dinner) when we realized in a panic that there was nothing for the vegetarians and vegans to eat except oranges and bread!

S rummaged in his pantry and came up with this

Lentils are fairly cheap if you buy them at an Indian or Asian grocery and even our little ones like these. We either serve them with rice or use them as a spread on bread, or a dip for vegetables.

    If you are buying the lentils in an Indian store, the ones I use are the salmon-colored ones labelled “masoor dal.” You can substitute a stick of butter for the coconut cream if you don’t care about it being vegan.

    I’ve been getting my lentils, appallingly, at Walmart. They’re the common brown variety. I should check around and see if there are other types to be had. I’d be shocked if there weren’t considering out multi-ethnic Stillwater is.

      Walmart has great prices on dried beans of every variety, I get all of my black beans and stuff there…K
